This is one of the best banana breads I have ever had — vegan or not.
The Baking Fairy herself, Valentina, graciously allowed me to share her recipe on my blog! This bread turned out so sweet and moist that I knew I had to share it with everyone 😄
I did not have a 9×5 loaf pan, so I used three 2lb foil loaf pans instead (photo above).
It turned out beautifully, and it took even less time than expected (around 30 mins)!
** If you use smaller pans rather than a 9×5, just be sure to check the loaves with a toothpick every few minutes to ensure they are baking properly and not burning or drying out.
